After growing lots of different plants, I discovered that I had an increasing interest in purple vegetables. What is special about purple vegetables? They have high doses of antioxidant, and the group of antioxidants that give purple vegetables their color are called anthocyanins. Anthocyanins protect purple vegetables from sun damage, cold temperatures, and other stressors. They also help prevent and heal your cells from damage.
